Raw Courgetti & Basil & cashew sauce

Yummy, easy and no cooking involved. Prepared in 20 minutes.





2 Courgettes

2 Spring onions

1 red bell pepper

2 Tomatoes



1 Cup of cashews soaked in water for 20 minutes

1 tablespoon of olive oil

1 cup full of fresh basil leaves

1/4 Cup of water

2 Spring onions

1 tablespoon of lemon juice

½ teaspoon salt



  1. Make the courgette into ribbons with either a spiraliser or a peeler. Cut the red pepper and 2 spiring onions thinly. Chop the tomatoes. Place in a bowl and put to one side.

  2. Blend the sauce ingredients together. Use half the  on the courgetti and the other half makes a yummy salad dressing.


Tip: For some extra flavour add some grated cheese.
